Hash Brown Waffles

This dish is a combination of two of my all time favourite comfort foods! The waffles are crispy on the outside but soft and tender on the inside. Check out my Instagram Story Highlight to see a step by step on how to make these.


Prep Time: 10-15 minutes

Cooking Time: 5-10 minutes

Total Time: 25 minutes

Ingredients:

4 Potatoes

2 eggs

1/4 cup milk

1/2 cup chopped scallions / green onions

1/2 cup - 1 cup grated cheese

Salt & pepper to taste

Butter to grease

Cooking Pot

Grater

Whisk

Spatula

Mixing Bowls

Waffle Iron


Method:

  1. Parboil the potatoes for about 6-7 minutes and peel them. They should be firm but still soft enough to grate.

  2. In a bowl, whisk your eggs and milk together. Do not add all the milk at this point, you might not need it.

  3. Grate the potatoes into shreds.

  4. At this point, heat your waffle iron.

  5. To the milk and egg mixture, add in the shredded potatoes, grated cheese, spring onions, salt and pepper.

  6. Mix until well combined. At this point if you feel your mixture is too dry, you can add the remaining milk to it. If you feel your mixture is too runny, add some more shredded potatoes.

  7. Grease your waffle iron with some butter.

  8. Add some of the mixture to the iron and spread it around evenly.

  9. Your waffle iron should indicate when it's done cooking. However if it does not feel cooked to you, go with your gut and leave it in there for a few more minutes.

  10. If you do not have a waffle iron, simply cook the hash brown in a pan till both sides are golden brown.

  11. Plate up the waffles with some spring onions, sauce of your choice and dollops of sour cream. Enjoy!
