Asian Salad

This recipe is a recreation of one of my favourite salads to eat at The Nutcracker in Mumbai. It is spicy, zingy and the peanuts add a great texture to it as well. You could also add a protein of your choice to make the salad more filling. Happy Cooking!

Serves: 1


Ingredients:

• 1 medium sized carrot

• 1 small zucchini

• 1/3rd raw papaya

• 1/4 cup roasted peanuts

• Mint

• Coriander


Dressing:

• 1/2 tbsp olive oil

• 1/3 tbsp honey

• 1-2 cloves of garlic, minced

• Chilli flakes according to taste

• A splash of lime

• Salt & pepper


Method:

  1. Shred all the vegetables and transfer into your serving bowl. Add roasted peanuts to the bowl as well.

  2. Mix all the ingredients required for the salad dressing and pour onto the vegetables.

  3. Garnish the salad with mint and coriander. Mix well before eating.
