We all love pancakes, don't we? The easiest way to make them at home is by using a pancake mix. But lets be honest, pancakes made from mixes aren't the best! They’re not fluffy enough, they're the wrong texture and it isn’t a very enjoyable experience. On the other hand, making pancakes from scratch isn't really hard but at the same time our laziness gets in the way. In this blog, I am going to show you how to make nice, fluffy and most importantly delicious pancakes using your pancake mix!

This is the pancake mix that I use - Betty Crocker Complete Pancake Mix : Buttermilk. I prefer the buttermilk variant over the regular as it makes fluffier pancakes. However, you could use any pancake mix you have.

As you can see from the packaging, the instructions are to ‘Just Add Water’ to the measurements given at the back. If you follow this step, you'll get a pretty decent pancake.

These three steps will elevate your Pancake Mix Game:

  • Adding Milk & Water to the mix

  • Adding baking powder

  • Using an egg mould / liner

What do these do?

  • Adding milk makes the batter creamier and slightly thicker than just adding water.

  • Baking Powder is a leavening agent. What that means is it will make the pancakes fluffier and lighter.

  • An egg mould / liner restricts the spread of the pancake batter to its boundary. The less the batter spreads, the thicker your pancakes are.

Here are the measurements and steps I follow:

INGREDIENTS for 1 pancake:

• 25 g pancake mix

• 25 ml milk

• 1-2 tsp water

• 1/4 tsp baking powder

METHOD:

• Place your pan on the stove and let it heat well.

• Sieve the dry ingredients in a bowl. Add the wet ingredients to it and mix together.

• Add butter to your pan. Then place your egg mould on it.

• Pour your pancake batter into the egg mould.

• In about 20-30 seconds, when the batter takes shape of the mould, remove the mould from the pan.

• Cook both sides of the pancake evenly and that's it! Softer, fluffier pancakes in just a few simple steps!

I made pancakes according to the instructions of the mix as well as with my tips & tricks to show you all the difference. As you can see, the one with added ingredients looks way softer and fluffier than the one with just water in it.
